枸杞燉鴿蛋的製作材料:
輔料:枸杞子15克
調料:豬油(煉製)50克,大蔥5克,姜5克,醬油6克,料酒10克,胡椒粉2克,花生油30克,澱粉(玉米)20克,鹽5克
做法
1. 將枸杞洗淨;
2. 鴿蛋放涼水鍋中,用小火煮熟去殼,滾上乾澱粉,放入花生油鍋內,表面炸成黃色時撈出;
3. 將鍋置於旺火上,放入豬油燒至八成熱,將蔥段和薑片炒出香味,倒入雞湯燉3分鐘;
4. 撈出蔥段和薑片不用,加入醬油、料酒和胡椒粉;
5. 煮沸後撇淨浮沫,改用小火燉40分鐘左右;
6. 放入鴿蛋、枸杞和精鹽,再燉10分鐘左右即可。
