1、冬瓜去皮切方塊,姜切片,蔥白切段,蔥綠切末。
2、五花肉切方塊,和薑片一起下入鍋中,倒入清水,水開後繼續煮三四分鐘。肉撈起,沖水,瀝乾。
3、鍋洗淨,下入瀝乾後的五花肉塊,開小火煎。
4、待煎至肉表面有些焦黃(不要炒的太焦,因為待會還要繼續炒的),並滲出一些油時,下入冰糖,小火翻炒至糖融化。
5、下入薑片和乾紅辣椒,炒2分鐘。
6、加入開水——水量沒過肉。小火,燉30分鐘。
7、30分鐘後,下入蔥段和冬瓜,加鹽。
8、加1勺紅燒醬油,轉中火,翻炒均勻。
9、煮至冬瓜入味,湯汁收乾,撒上蔥花即可。
【小貼士】
冬瓜在燒制的過程中會出水,且燉肉還有湯汁,所以不必另外加水。
