原料:
豬腦60克、姜3克、雞蛋清24克、精鹽6克、甜醬3克、乾澱粉15克、八角、茴香各0.2克、蔥6克。豬油500克(耗30克)。做法:
1、將豬腦洗淨,撕去“紅筋”,放進開水鍋中,加入八角、茴香、姜、蔥 、精鹽等,煮10分鐘。
2、撈出晾涼,切成滾刀塊、並將湯及調料棄掉;再將蛋清打好,放入澱粉,調成蛋糊。[美食中國]
3、再把豬腦塊放入,調拌均勻;待油鍋到半熱時,將豬腦放進油鍋中炸,成草黃色時,撈出。
4、瀝去油,再入熱油鍋,重新再炸,直到呈杏黃色時,撈出,放在盤內即成,可備甜醬蘸著吃。
