原料:蟲草花3克,嫩豆腐1塊,高湯1碗,瘦肉30克,青蔥數根,麻油(或不放) 鹽、生抽、紅薯粉、料酒、蚝油、胡椒粉、味素(可免)
建議用高湯來作湯底,則可不必再放其它油。沒有高湯用清水代替的話,最好放勺豬油,以增加湯的鮮香度。
做法:
瘦肉切成絲,用紅薯粉、料酒、鹽、生抽、蚝油、胡椒粉醃15分鐘;豆腐在盤中切成1厘米寬、4厘米長的小條塊;蟲草花洗淨,用清水泡5分鐘撈出,泡過蟲草花的水不要倒掉,放進紅薯粉拌勻成紅薯粉水。
冷鍋中倒入高湯和蟲草花,大火燒開水,轉小火先煮10分鐘。
湯色變成紅色,下豆腐繼續煮10分鐘。(“千滾豆腐萬滾魚”,豆腐在湯里多煮湯會更鮮)
倒入紅薯粉水,邊倒邊搖晃鍋子,讓紅薯粉水與湯均勻揉和在一起。(火都不要開大)
湯變粘稠後,把火開大,倒進肉絲,用筷子攪開肉絲,待肉絲全變成白色,關火,趁湯有餘溫時放鹽、生抽、胡椒粉、味素(可免)調色調味,最後撒上青蔥粒淋麻油即可。(不喜歡麻油味的可免放)
