What’s in a Name

Finding the right name for a restaurant is of utmost importance because it should represent it’s soul. ‘VAATSU’ was chosen for ours after extensive research. The name Vaastu is derived from the ancient Indian science “Vaastu Shastra” that aims to create harmony between the human, their dwelling and the Nature. This harmony is established by balancing the interplay and interdependence between the five basic elements for all creations (Panchbhoots in Sanskrit, the language of ancient Indian scriptures): Space (Aakaash), Air (Vaayu), Fire (Agni), Water (Jal, pronounced Jul, u as in hut) and Earth (Bhoomi). An invisible and constant relation exists between these elements outside and within an individual. Vaastu aims at extracting and utilizing the natural positive energy of these five elements to create a unique equilibrium between the individual and his environment.
Vaastu is the sublime elucidation of our surrounding and their influence on our life.

Creating the Harmony to Delight

Vaastu people have been handpicked and trained to care about the restaurant as their own home, and will care for you as the most important guest in it. Our Chefs are obsessively passionate about hygiene, good cooking practices and culinary fundamentals that are the foundation for a kitchen that delights at the table. No detail is too trivial; no triviality too minor to ignore.
Vaastu service at the table understands and respects the kitchen; linking it to Vaastu Guests, by assisting them in choosing the right food and beverage to create “a complete dining experience that harmonizes and delights all senses”.

The Vaastu Cuisine

Vaastu cooking nurtures the soul of the unique Indian ingredients. A dish is prepared so that the aromas and flavors of all its ingredients can harmonize and be enjoyed in their totality, yet preserve their distinctiveness. Vaastu kitchen respects and selects its sources with utmost care, choosing only the finest ingredients that can stand alone proudly, yet combine flawlessly.
Vaastu offers a personal rendition of Indian cuisine where the traditional methods of cooking, authentic Indian ingredients and the legacy of our food culture are all combined with an innovative gastronomic approach. While the traditional clay oven (Tandoor) and traditional cooking methods are the soul of Vaastu, modern kitchen appliances and techniques are its heartbeats. While innovation and improvisation are highly encouraged, consistency of the food is at the core of Vaastu cuisine.
Vaastu intent is to reinvent Indian culinary craft and create a distinctly advanced cuisine, without compromising the purity and simplicity of historic traditional Indian cuisine. Garnish and presentation play important, but supplemental roles. Respect for tradition is as deep as the respect for imagination.

The Vaastu Menu

Vaastu cuisine is infused with a markedly curative potential through time-tested Indian herbs and spices. It is reflected in Vaastu menus’ ultimate articulation, and manifests itself both in the creation and presentation of the individual courses. Vaastu menu blends tradition with health and lightness.
It is important to Vaastu that guests enjoy a perfectly balanced meal that continues to satisfy afterwards. We do not want guests walking out of the restaurant feeling as if they over-indulged. We want them to feel stimulated, knowing that they can look forward to breakfast the following morning. Vaastu believes that food need not be too rich or too much to delight all senses.
Vaastu approach to vegetarian menu is to fuel a passion for vegetables, cereals and grains. Complex textures, artistic shapes, vibrant colors and full flavors are tenderly explored to transform vegetables, dairy products, and cereals, beans and lentils into unforgettable main courses.

Seducing the Palate

Apart from our customary ala carte menu, every day we create two eight-course tasting menus – each a series of smaller, focused dishes. Vaastu prefers its cuisine to be experienced in a progression of petite courses with each course laying the foundation for the next. We want to create that sense of surprise when something is so exciting, so delicious…that you think WOW – and then it is gone. We want an exhilarating sensation to peak on your palate. So we serve a series of small courses to excite your mind, satisfy your appetite and pique your curiosity. We want you to say, “I wish I had just some more”….and then the next course arrives and the same thing happens, but in a different way; a whole new aroma, flavor, feel, sensation and delight!

Inspiring the Food

Our Alcoholic and non-alcoholic beverage menu is created with our culinary philosophy in mind - that food and beverage are intended not only to complement each other, but to inspire one another, making the selection and interplay of the beverage and food an integral part of the complete dining experience.

Romancing the Wine

India’s history runs parallel to the legends spawned by its rich mythological treasures. Often, the strands of mythology and history are woven so intricately, that it is difficult to separate truth from fantasy; such is the evocative journey of tracing the origin of wine drinking in India.
Long before Europe discovered the ‘incredible taste of fermented grape juice’, prehistoric Indian communities were enjoying the intoxicating juices distilled from plants and fruits. India’s mythology, history and literature suggest that the temporal joys offered by a glass of wine and its complex spiritual symbolism were equally familiar to generations of Indians!
When and how India’s wine drinking tradition was lost is not known. What is well known, however, is that Indian food has developed the greatest notoriety for pairing with wines; its complex and intricate layering of spices poses a delicate challenge.
At Vaastu this challenge has been met with a holistic approach -- as the dominant aromas and flavors in Indian cuisine come from spices rather than main meat or vegetable, Vaastu has paired wine with spice-based flavor families, rather than seeking specific wines to match specific dish.
Vaastu wine menu has been well researched, focusing on the best match between fine international winemaking realities and flavors and aromas of Indian food; some for tasting by the glass. We feel a tasting portion of the paired wine will allow you to enhance the experience as our cuisine romances the wines.

Surfing The Guangzhou Vaastu

Vaastu’s first ambitious project will start operations in Guangzhou, China. Vaastu Guangzhou can offer 5 different experiences:

Vaayu

The connoisseurs of fine dining can enjoy the calm, tranquil and exclusive setting of The Vaayu, reminiscent of the finest Indian royal traditions and service. The Vaayu Menu blends Indian cuisine with western fine dining to create an unparalleled experience. The Vaayu also offers two 8-course tasting menus with an inspiring supplement of wines and other alcoholic or nonalcoholic beverages. The tasting menus change every day.

Bhoomi

The casual diner can enjoy the vibrant and colorful traditional setting of The Bhoomi (Earth), reminiscent of the Indian Dhaaba (village restaurant). The Bhoomi menu offers the tradition on an Indian platter. The purist can also relish a set Thali (meal) in a unique experience, reminiscent of the customary Indian way of sitting on the kitchen floor to savor freshly cooked hot meal.

Aakash

The adventurous can enjoy the Bhoomi meal in the hustle bustle of the Shopping Plaza in our lively outdoor dining section, The Aakash (Space). Aakash will open in September 08.

Agni

The private diner can choose The Agni (Fire) where a business or private gathering of 8 to 20 guests can be customized to meet your personal needs. This includes business meetings, team building/ bonding activities, and chef’s classes to induct the beginner into Indian cooking. You can also choose to have our chef cook an exclusive menu in front of you.

Jal

You could choose to stop at our friendly The Jal (Water) Bar and allow our expert bar tenders to help you relax and unwind before deciding your particular dining experience for the evening.

The Location

Vaastu's first branch is centrally located in the new emerging Central Business District of Guangzhou, Pearl River New City (ZhuJiang Xin Cheng) within 10-15 minutes drive from Tianhe, Ersha Dao, Luhu, Favorview, Trade Fair Exhibition halls and most of Guangzhou’s 5 start hotels. 30 min from Castle Hill and Golden Lake. But now this branch is TEMPORARILY CLOSED.
Vaastu's second branch, Huanshi Branch is open. Located in 475,Huanshi Dong Lu, Yuexiu District of Guangzhou, it is only few minutes walk from the Exit B of metro station The Zoo (Line 5).

The Reservations

Our Colorful Dining section, BHOOMI, is open 11 am – 3 pm for lunch, and 6 pm - 11 pm for dinner. Our Fine Dining section, VAAYU, is open for Dinner only; 6-11 pm. However, it can be reserved for luncheons of 20 or more guests. Private Diner AGNI requires prior reservations. Always feel free to speak to our Reservation team, who can clarify your options for you.
Reservations are recommended. Our reservation office is open 10:00 a.m. – 9:00 p.m. all days. And we will be happy to assist you.
